When we first started developing this knife, one thing became all too clear: most knives called “Japanese” aren’t actually made in Japan.

So we did what we always do: headed straight to the source. And that means Seki, the heart of Japanese blade-making for hundreds of years.

There’s a deep connection to steel here that reaches all the way up to samurai swords.

It’s where one of the world’s greatest knife-making traditions lives on. A craft unlike any other, passed down through generations.

This Gyuto Knife took a whole year to develop with Ryo, the master knife-maker at the family-run workshop that we partnered with to make this beauty, famed for their exceptional craftsmanship. Together, we explored what makes a Gyuto knife remarkable — its balance, precision, versatility, razor-sharp blade, and geometry honed to perfection.

The blade—San Mai, meaning 3 layers in Japanese—is hammered and lightly patterned, with a double heat treatment for added strength. Its handle is crafted from 70% wood and 30% resin. This pakkawood construction handles heat and water brilliantly, standing up to daily life in the kitchen. After all, if you take good care of it, it’s the knife you’ll be using every day for the rest of your life.

HRC 60 hardness, 20° edge: only the best will do.

The Gyuto Knife embodies Japanese culinary craftsmanship. Everything about it is refined and no detail is overlooked. Perfection, balance, nothing left to chance. The Gyuto Knife is the result of Atma’s standards meeting Japanese expertise and tradition, giving everyone the pleasure of a clean cut, every time.

For that, we opted for an HRC 60 rating: the sweet spot where hardness meets flexibility for a truly superior blade that lasts.

We’ve chosen a 20° cutting angle. The sharper the angle, the finer the edge. Your knife will glide through ingredients with minimum resistance, making every cut cleaner, neater, and more precise — the signature of a Japanese blade.

What is a Gyuto knife?

A Gyuto knife is a versatile Japanese kitchen knife, shaped with a curved blade for a clean, precise cut.

The hammered, slightly patterned finish helps prevent food sticking and makes slicing easier.

Is the Gyuto Knife suitable for left-handers?

The Japanese knife is perfectly balanced for left-handers, with a double-bevel edge that offers the same sharpness on both sides—precision cutting, whichever hand you use.

Unlike single-sided blades, it’s truly ambidextrous: right or left, you get a clean, even cut.

The oval-shaped handle sits naturally in your hand for a comfortable grip, adapting to each individual. This thoughtful design puts you in total control, with a feel that’s second nature from the first time you pick it up. No matter if you’re left or right-handed, you’ll have the same flawless performance.

How to care for my Gyuto Knife?

The knife shouldn’t go in the dishwasher, and never soak it, either. Both can damage the handle and the blade.

To keep the wooden handle in top condition, wipe it with a slightly damp cloth or sponge and avoid getting it wet wherever possible. If it does come into contact with water, dry it straight away with a dry cloth.

Wash the blade by hand, using a non-abrasive sponge to prevent scratches.

What material is the Gyuto Knife Sheath made from?

It’s crafted from black calf leather for elegance and durability.

Subtle Atma symbols add a refined signature touch.

Made to measure, it fits The Gyuto Knife blade like a glove and offers day-to-day protection that keeps your knife at its best.

How do you use a sharpening stone?

1. First, soak the stone in a bowl of water for 10 mins.

2. When sharpening, keep a bowl to hand and re-wet the stone as needed.

3. Starting with the coarse 280-grit side, glide the blade across the stone at 30°, the same angle as its cutting angle.

4. Switch to the 1000-grit side and repeat. This will refine the edge further.

Washing advice: Rinse the stone with lukewarm water after use to remove any residue or dirt. If needed, use a soft sponge to gently clean the surface. Let it air dry naturally.

Don’t store the stone damp, it must be dry. Never put it in the dishwasher.

Superbe Couteau

Je suis trés satisfait de ce nouveau couteau. Sa maniabilité, son poids et son design en font un outil trés ergonomique.
Sa finition est magnifique. Son étui et la pierre à aiguiser associée le complétent parfaitement.
Enfin, son tranchant est exceptionnel.

Un vrai couteau japonais

A peine déballé, un petit passage au cuir d'affutage comme pour tous mes couteaux neufs et on teste. Il est léger et offre une belle géométrie de lame pour une très bonne maniabilité en 18 cm. La coupe est fine et précise. Le tranchant de l'acier VG10 est redoutable; comparable a ce que j'obtiens avec mon couteau japonais Suncraft. Précaution d'usage : à voir dans le temps mais pour l'heure c'est un sans faute pour cette très belle réalisation.
